Toddler Zucchini Scrambled Eggs

This is a wonderful way to incorporate veggies into your toddler’s and your breakfast. And if your child does not like veggies, don’t worry, he or she won’t be able to really taste or see the veggie :) If your child notices the hint of green, start with 1/2 a zucchinini.

Zucchini is high in vitamin C and lutein. It also contains vitamin A, folate, potassium and fiber. Folate is important prior to and during early pregnancy because studies show it reduces the risk of neural tube defects in babies by up to 70%!

Ingredients:
3 organic eggs
1 Zucchinini
Splash of whole milk

Directions:
1. In your food processor or blender, puree the zucchini until slightly chunky (You don’t want to make it watery, which can happen quickly)
2. Whisk eggs and milk in a small bowl
3. Pour in the zucchinini
4. In a heated skillet, scramble the mix to your liking
5. Let cool and serve with some fresh fruit
