This is a really quick and easy snack.
Take a couple dates and slice a thin layer off the top. Remove the pit. Place a handful of cashews in a food processor, or crunch them by hand. Fill the empty space in the date with crushed cashews and you have yourself the perfect combination of sweet and salty. Delicious and only two ingredients!
Cashews should be the only ingredient on the package. I purchase dry roasted, no salt added, organic cashews from Trader Joes. Some brands contain hydrogenated oils, so make sure you look at the label before you purchase the cashews. Cashews are high in protein and contain Vitamin K, phosphorus, copper, zinc, manganese, and magnesium. They do not contain cholesterol and provide heart-healthy fat.
