Summertime Watermelon Salsa With Spicy Lime Tortilla

Here is a recipe your child will enjoy making and eating with¬†you. My little girl pulled off the cilantro leaves, squeezed the lime, and pulsed all the ingredients¬†for me. This is such a refreshing salsa for hot summer days. For the chips, refer to my earlier blog post “Healthy Superbowl Snacks”. Add 1 tsp of finely grated lime zest to increase the lime flavor.

4 teaspoons extra-virgin olive oil
1/4 teaspoon ground chipotle chile
1 1/2 lb watermelon sliced
3/4 inch thick 1 medium tomato, coarsely chopped
1/2 cup chopped English cucumber
2 tablespoons chopped fresh cilantro
1 tablespoon chopped shallot
1/2 medium Serrano, seeded and chopped
1 tablespoon fresh lime juice Kosher salt

1. Prepare a high gas or charcoal grill
2. In a small bowl, combine 1 tsp of olive oil with the ground chipotle
3. Brush the watermelon on both sides with the chipotle oil and sprinkle with 1/4 tsp of salt
4. Grill watermelon until charred spots appear on both sides (about 1 minute per side)
5. Transfer watermelon to a cutting board and remove the rind
6. Coarsely chop the watermelon
7. In a food processor combine the watermelon, tomato, cucumber, cilantro, shallot, Serrano and remaining 3 tsp olive oil
8. Pulse until ingredients are well mixed, but still chunky
9. Transfer salsa into a medium bowl and stir in the lime juice
10. Refrigerate for an hour before serving
