Summertime Watermelon Salsa With Spicy Lime Tortilla

This is such a refreshing salsa for hot summer days. For the chips, refer to my earlier blog post “Healthy Superbowl Snacks”. Add 1 tsp of finely grated lime zest to increase the lime flavor.

Ingredients:
4 teaspoons extra-virgin olive oil
1/4 teaspoon ground chipotle chile

3/4 inch thick 1 medium tomato, coarsely chopped
1/2 cup chopped English cucumber
2 tablespoons chopped fresh cilantro
1 tablespoon chopped shallot

3. Brush the watermelon on both sides with the chipotle oil and sprinkle with 1/4 tsp of salt
4. Grill watermelon until charred spots appear on both sides (about 1 minute per side)
5. Transfer watermelon to a cutting board and remove the rind
