Prosciutto Wrapped Melon

Here is another easy snack for summer that is full of health benefits. One cup of cantaloupe is just 56 calories, but provides 108% of the daily value for vitamin A! It also contains vitamin C, which stimulates white cells to fight infection. Cantaloupe is also a good source of potassium, vitamin B6, dietary fiber, folate, and niacin (vitamin B3).

Prosciutto is an Italian ham. I recommend purchasing prosciutto from an Italian Deli. Prosciutto is high in protein and Vitamin A, but it does contain high amounts of sodium, so make sure you aren’t eating other salty foods throughout the day. Too much sodium leads to water retention and elevated blood pressure. It is all about balance! And remember, each person is different and each pregnancy is different. In my first pregnancy, my blood pressure was extremely low, so I had to consume slightly higher amounts of sodium than I normally consumed. With this pregnancy, my blood pressure is normal, so I can maintain my regular sodium intake level.

Like all citrus fruits, limes and their juice are very high in vitamin C, which like I said earlier helps fight infection. Limes provide great flavor and are sodium and fat free. Limes contain disease fighting compounds called limonoids, and studies show the compounds protects against cancer of the skin, breast, mouth, lung, colon and stomach!

1 Cantaloupe
1 Lime
9 oz fresh prosciutto thinly sliced

1. Cut cantaloupe in half and scoop out the seeds
2. Cut the cantaloupe into slices and remove the rind (skin)
3. Place the cantaloupe in a bowl and sprinkle with lime juice
4. Wrap each slice with one piece of prosciutto and refrigerate until ready to serve
