Homemade Roasted Red Pepper and White Bean Pizza

Our baby boy arrived two weeks ago – healthy and alert! He weighed 8lbs 4.6oz. Now with two little ones in the house, I need REALLY QUICK dinners!

I love pizza on the grill, but here is another delicious pizza recipe that takes 5 minutes to cook. Bonus: this pizza is only about 400 calories. If you roast the peppers yourself, your kitchen will smell delicious.

Ingredients:
1/2 cup organic white beans no salt added
1 tablespoon pesto
1 large whole grain pita (I like the sprouted grain wraps)
1/2 cup chopped roasted red peppers (you can buy in a can or roast red peppers yourself)
1 tablespoon grated parmesan

Directions:
1. Preheat the broiler
2. Spread pesto on the pita bread and place on a baking sheet
3. Place the red peppers and beans over the pesto
4. Sprinkle with the parmesan
5. Broil for 4-5 minutes
