Homemade Kid Friendly Chicken Fingers

Anytime I order chicken fingers at a restaurant, they are covered in thick greasy breading. Yes, I am one of those moms who pick off all the breading for my toddler because I don’t want her eating a tiny piece of chicken covered in FAT! This recipe is healthy and easy to cook. Plus, the yogurt keeps the chicken nice and tender.

1 large boneless skinless organic chicken breast
1 cup plain organic yogurt
1 cup crushed corn flakes or bread crumbs (You can add crushed walnuts, pecans, or almonds to the bread crumbs for added taste)

1. Preheat oven to 400 degrees F
2. Line cookie sheet with parchment paper
2. Cut chicken breast into strips
3. Coat each strip with yogurt and then cover with crushed corn flakes or bread crumb mixture
4. Place strips on parchment covered cookie sheet
5. Bake for 7 minutes, turn the strips over, and bake for an additional 7 minutes
6. Serve with fresh fruit
