Homemade Flax and Peanut Butter Protein Bars

* 3 cups organic raw oats
* 1/2 cup ground flax seeds
* 1 teaspoon cinnamon
* 1 teaspoon sea salt
* 2 1/2 cups organic non-fat plain Greek yogurt
* 1/4 cup organic maple syrup or raw honey
* 3/4 cup organic peanut butter or almond butter
* 1 teaspoon organic vanilla extract
* 3-4 teaspoons 100% cocoa powder or carob powder if you want to avoid caffeine
* 1/2 cup chopped dates
* Up to 1 cup vanilla or chocolate organic whey protein powder (optional). Make sure the protein powder is 100% whey and does not contain any artificial sweeteners

Directions:
1. Preheat oven to 350 degrees F. Grease a 9×13 inch baking dish with coconut oil
2. Grind one cup of the organic raw oats and combine with remainding oats and dry ingredients
3. In a separate bowl, combine the wet ingredients
4. Mix wet and dry ingredients until thoroughly combined
5. Taste mixture – I added a little more cinnamon because I like the taste
6. Spread the mixture into your baking dish and bake for 15 minutes. Take the pan out of the oven and slice into bars. Spread the bars onto a cookie sheet and bake for 15 more minutes. Remove and let cool
7. Wrap the bars individually and refrigerate up to 3 days or freeze up to a week

If you would like this bar to help with a chocolate craving – dip the bars in chocolate! Mix carob or cocoa powder with vanilla extract and almond butter and melt in a bowl over boiling water. Do not let the bowl touch the water in the pot. You can melt a bag of dark chocolate chips too.
